    Artichokes are delicious to eat roasted, grilled, fried or steamed.  In the kitchen garden they provide incredible ornamental value with their structural form, silver-green foliage and blazing purple colour when allowed to bloom.  Artichokes make interesting additions to floral arrangements.

     

    Grow artichoke plants where the summers are cool and mild and where temperatures never fall below -4 C. Artichokes very heavy feeders that require extra rich, slightly alkaline soil that is well-drained.  Grow in full sunny position away from trees. These are perennial crops that are grown for five to ten years, though they can last much longer.  Every three to four years, remove the side shoots to establish a new plant.

     

    Artichokes are high in antioxidants.

     

    ARTICHOKES IN OIL
    Ingredients  for 2 glass jars of 250 grams
    10/12 small artichokes, extra virgin olive oil, red wine vinegar, salt, black pepper, chopped thyme, garlic cloves, lemon juice.
    Preparation
    Wash the artichokes, remove the first leaves, the hardest ones and cut the stem, leaving about an inch. To keep them from blackening, immerse them for about ten minutes in a solution of cold water and lemon juice. In a saucepan pour one part of water, two parts of red wine vinegar (which has an antibotulin effect) and a pinch of salt. As soon as the mixture of water and vinegar reaches the boil, add the artichokes and boil them for about 7 minutes, then drain and place them on a tablecloth to dry them. Place them in dry glass jars and previously sterilized in boiling water, together with their lids. Fill the jars with the artichokes and flavor them by adding chopped thyme, black pepper and a few cloves of garlic. Finally, pay the extra virgin olive oil until the artichokes are completely submerged and tightly close the jars with their lids. To prevent possible botulinum contamination, sterilize the jars full of product by boiling them immersed in water for 30 minutes. You can taste the artichokes in oil after about 20/30 days. Once the jar has been opened, keep it in the refrigerator and consume the product within a short time.
